Multigrain Brownie

I recently purchased protein flour from one of my contacts and I had to finish it so I decided to use it by making a brownie and the brownie turned out so yummy. The major ingredient was dried chickpeas. The flour itself is a combination of wheat, flaxseeds, brown rice , barley and chia seeds. If you don’t get it readily you can use multigrain flour and add a little quantity of besan or gram flour for the chickpea flavor.

Let me tell you a secret this recipe is super healthy as we use olive oil and jaggery !

Before you begin one important ingredient for this recipe is aquafaba, which is the water you cook your chickpeas in. So next time you make chole, save 1/2 cup water and then attempt these brownies, this is an ingredient you can’t skip.

Ingredients

  • 2/3 cup olive oil or normal refined oil
  • 200 g dark chocolate or milk chocolate
  • 1/2 cup aquafoba
  • 3/4 cup jaggery
  • 1 teaspoon vanilla extract
  • 1 1/2 cup multi grain chick pea flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips (optional)

Method

  1. Preheat oven to 325°F/160°C. Lightly grease or line an 8×8 inch tin
  2. Place the oil and chopped chocolate together in a microwave safe bowl. Melt in 30 second increments whisking until the chocolate is completely melted and smooth. Once melted set aside to cool
  3. In another large mixing bowl beat the aquafaba and the jaggery together with an electric mixer or using a spatula or hand blender until it’s thick and shiny. Mix in the vanilla extract and the melted chocolate mixture
  4. Stir in the multi grain flour, cocoa powder and baking soda. Mix well until it’s nicely blended, don’t over mix at this stage once you add the flour
  5. Stir in the chocolate chips
  6. Pour the batter into the prepared baking tin
  7. Bake for 30-40 minutes until the brownies pass the done test
  8. Insert a knife or tooth pick into the centre of the brownies – if it comes out clean then it’s done, else it needs to cook for some more time. If you bake it for a longer time keep checking at regular intervals
  9. Let the brownies cool in their tin completely before slicing into.
