Zuchini Dal

Zuchini dal was introduced to us by my aunt Banu Chithi. It’s a very easy to prepare dal and nutritious and delicious at the same time. It’s a combination of simple flavors and spices but royal in the taste !

Ingredients

  • 1/2 cup chana dal, soak it for few hours 
  • 1 onion
  • 2-3 tomatoes 
  • 1 large zuchini
  • 1-2 green chillies 
  • 1 inch ginger
  • Asafoetida
  • Mustard seeds
  • Cumin seeds
  • 1/2 tsp red chilly powder
  • 1 tsp garam Masala 
  • Salt to taste 
  • 1-2 tbsp oil or ghee 

Method:

  • In a pressure cooker, add 1 tbsp oil or ghee, add mustard seeds. When the mustard seeds, add cumin seeds, green chillies, ginger and asafoetida
  • Add 1/2 tsp red chilli pwd and 1 tsp garam masala
  • Add onion and fry till onion till translucsent. Then add tomato and cook for few minutes 
  •  Add zuchini and chana dal, and then add 4-5 cups water till everything is immersed. Add salt to taste
  • Keep it in pressure cooker for 3-4 whistles
  • Once the steam releases, open the cooker and boil everything for 2 minutes

Serve hot with rice and a subzi of your choice. Potato fry goes well with this dal
