Eggless Oatmeal Raisin Bread


A very easy to make and delicious oatmeal raisin bread ! This bread recipe does not use any butter or oil !! Just a combination of oatmeal, raisins, flour, apple juice and some sugar gives us this yummy and flavorful bread !

This recipe is adapted from the recipe “Fruit Loaf with Apple Spread” from the book “Kitchen Library Baking” by Parragon Publications. The original recipe calls for wholemeal self raising flour, muscovado sugar, malt extract and sultanas. However, I have used raisins, regular self raising flour and regular sugar and maple syrup instead of malt extract for this recipe.

Enjoy this bread with a delicious fruit spread made with fresh strawberries and apples


  • For the bread
    • 6 oz rolled old fashioned oats
    • 1 tsp ground cinnamon
    • 3 1/2 oz sugar
    • 10 1/2 oz raisins (You can use any variety, I used  the brand Sunmaid California Raisins )
    • 2 tbsp maple syrup
    • 300 ml apple juice – Approx 1 3/4 cup  ( I used store bought 100% apple juice)
    • 6 oz self-raising flour
    • 1 1/2 tsp baking powder
    • 1 tbsp butter for greasing the loaf tin
  • F0r the fruit spread
    • 8 oz strawberries, washed and chopped
    • 2 apples, washed, peeled and chopped, mixed
    • 1 tbsp lemon juice
    • 2 cups apple juice ( I used store bought 100% apple juice)


  • For the bread
    • Line a loaf tin ( I used a 9 in x 5 in loaf tin) with parchment paper and grease it with butter. Dust with flour and tap gently to evenly spread in the tin
    • Place the oats, cinnamon, sugar, raisins, and maple syrup in a bowl. Stir in the apple juice and set the mixture aside for 30 minutes
    • Sift the flour and baking powder and keep aside
    • After 30 minutes, fold the flour into the oatmeal, raisin and juice mixture

    • Preheat the oven to 350 degrees Fahrenheit for 10 minutes
    • Spoon the mixture into the greased tin.Give tin a light tap on table to spread air evenly in the mixture and put immediately in preheated oven
    • Bake in the preheated oven for around one hour until a light crust is formed and the bread passes the following tests :
      • Test by lightly touching the centre of bread when minimum cooking time is up. If no imprint is left, the bread is done
      • Pierce a fine skewer in the centre of the bread , if it comes out clean, it is done
    • Leave the loaf to cool in the tin for a sufficient time and then turn out the bread the bread on a cooling rack. Leave it to cool for a sufficient time before attempting to cut it

  • For the fruit spread
    • Chop the strawberries
    • Chop the apples and pour the lemon juice over the chopped pieces
    • Place the strawberries, apple and apple juice in a pan and bring to a boil over medium heat
    • Once it comes to a boil, simmer gently for around 30 minutes
    • Once the mixture cools, beat well in a blender and store in an air tight container once cooled

Serve the bread loaf with the apple strawberry spread and enjoy 🙂
