Strawberry Chocolate Peanut Butter Waffle


Enjoy this delicious and crunchy strawberry peanut butter chocolate waffles for your breakfast. This is an eggless recipe, and the combination of chocolate, fresh strawberries and home made peanut butter adds a yummy flavor to the waffles.

This recipe is inspired by Martha Stewart’s recipe for peanut butter waffles: http://www.marthastewart.com/353000/peanut-butter-waffles. I have made my adaptation to be majorly whole wheat ( only a tiny fraction of all purpose flour for the crunch), eggless and also added flavors of strawberry and chocolate

Ingredients

  • 10 strawberries
  • 1 1/2 cup wheat flour
  • 1/4 cup all purpose flour
  • 1 cup yogurt
  • 1 cup milk
  • 1/4 cup cocoa powder
  • 1/4 cup sugar
  • 1/2 tsp kosher salt (or regular salt )
  • 1/4 cup unsalted butter
  • 6 tbsp peanut butter
  • 1 cup yogurt
  • 1 1/2 cup milk
  • A few extra strawberries, sliced for the topping
  • Butter or cooking spray for greasing the waffle pan
  • Maple syrup for serving

Method

  • Wash the strawberries well, and blend in a blender to make a fine puree. Keep aside
  • In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt
  • In a blender or stand mixer, mix butter and peanut butter until smooth
  • Add the yogurt, milk and strawberry puree to the butter-peanut butter mixture and mix well until smooth. If using a food processor, use a medium speed for mixing
  • Add the liquid mixture to the flour mixture and stir until the batter is combined. At this stage, the batter must be of a pourable consistency but still thick enough to have a good texture for the waffle
  • Grease the waffle maker with butter or use a cooking spray
  • Heat your waffle maker and follow the instructions to make the waffle. I use a Cuisinart waffle maker and these are the steps I follow:
    • Preheat the waffle maker and wait until the green light turns on
    • Pour one ladle (if using a large sized ladle : picture below) or 2 ladles (if using a medium sized ladle) of the batter in the center and close the lid of the waffle maker ( The batter spreads itself pretty well, I don’t need to spread it before hand with a spatula )
    • Choose the desired browning setting and wait for the green light to turn on again
  • Your waffles are now ready
