Exotic Savory Vegetable Pancake 

Want to try something unique and yummy for a breakfast ! Enjoy this delicious and nutritious exotic vegetable pancake for breakfast or serve it like a mini pizza for a snack 😊 This is an eggless savory pancake made from a combination of rice flour, corn flour and gram flour and topped with vegetable bell pepper mixture , ketchup and cheese ! 

This is adapted from Jyoti N Parekh’s breakfast recipe


  • For topping
    • Spring onion, finely chopped – 1/4 cup 
    • 1 carrot, grated ( around 1/2 cup )
    • 1/2 red bell pepper, finely chopped ( around 3/4 cup ) 
    • Salt and pepper to taste 
    • Grated cheese – 1/2 cup
    • Tomato ketchup or chilli sauce 
  • For the batter 
    • Rice flour – 1/3 cup
    • Gram flour – 1/2 cup
    • Corn flour – 1/3 cup
    • Thick Yogurt or Greek yogurt – 1/4 cup 
    • Red chilli powder – 1/2 tsp
    • Salt to taste
  • Oil or ghee – 2 tbsp 


  • Mix all the ingredients for the pancake batter and add just enough water to make a loose batter. Keep aside 
  • Heat 1 tbsp oil or ghee and add bell pepper, carrot , spring onion. Sauté until the vegetables are well cooked. Mix salt and pepper and keep aside 
  • Grease a nonstick dosa pan with some oil. Pour one ladleful of pancake batter and make a round pancake
  • Sprinkle cheese and spread evenly on it 
  • Sprinkle and spread the vegetables evenly on it 
  • Add a few drops of tomato sauce or chilli sauce. You can sprinkle some more cheese if you wish to at this stage 
  • Cover and cook the pancake for a few minutes. The cheese will melt and the pancake base will be slightly brown 

Serve hot 😊 You can cut it into equal triangles and serve like a mini pizza. This will be a visual treat for your kids
