Carrot and Cheese Creamy Macroni



Macroni and cheese is something that all kids enjoy. Why not sneak in some vegetables and pack it up for lunch ! This is my first time trying a carrot and macroni combination but it actually enhances the macroni and also adds a little sweet taste. 

This recipe is also inspired by Chef Venketesh Bhatt’s recipe from the show “Samayal Samayal”. He made chili cheese macroni, using both cream cheese and cheddar cheese. I made the macroni using freshly grated Parmesan cheese. 


  • Macroni : 1/2 cup 
  • Carrot: 1/2 grated
  • Onion : 1/2
  • Garlic: 1 clove 
  • Tomato : 1
  • Grated parmesan cheese : 1/8 cup
  • Milk – 1 cup
  • Butter – 1 tbsp
  • Olive oil – 1 tbsp
  • Dried oregano – 1 tsp
  • Dried red chilli  flakes – 1 tsp 
  • Basil leaves a few, optional 
  • Salt to taste 
  • A few drops of freshly squeezed lemon 


  • Heat 3 cups water in a saucepan or in a pasta dish if you have one 
  • Add some salt and squeeze a few drops of lemon 
  • Once the water is boiling, add the macroni and cover and cook for 10 minutes 
  • Drain the macroni, wash it with cold water and smear it with some olive oil. This step will ensure that the macroni is separate and not sticky
  • Heat the butter and olive oil in a pan and add some oregano, red chilli flakes, finely chopped garlic, and onion
  • Sauté for a few minutes and then add the grated  carrot and cook for a couple of minutes
  • Add the milk and bring to a boil
  • At this stage add the cheese, mix well and cook for a couple of minutes 
  • Add the finely chopped tomatoes and cook until the tomatoes get mushy 
  • Add the macroni, mix well and cook together with the sauce for couple of minutes 
  • Garnish with basil leaves and remove from flame
