Corn Pulav

Enjoy this delicious and colorful corn pulav ! This corn pulav is loaded with yummy corn kernels, spring onion and bell pepper, and is very easy to prepare !

This recipe is adapted from Sujata Malani’s recipe for corn pulav

Serves: 4


  • 2 cups uncooked Basmati rice
  • 2 cups cooked sweet corn
  • 1 big green bell pepper or red bell pepper
  • 1 big tomato, finely chopped
  • 1 spring onion, finely chopped (including the leaves)
  • 1 small onion, finely chopped
  • 2 tbsp garam masala (For best aroma, use freshly powdered garam masala)
  • 1 inch ginger, 2 green chillies, 1 clove garlic – ground to a paste
  • 1 tbsp ghee or oil
  • Salt to taste
  • For garnishing: Corainder leaves, finely chopped


  • Cook the rice with around 4 cups of water, adding a pinch of salt and a tsp of ghee so that each grain is separate. Keep it aside
  • Heat ghee in a pan and add the chilli, ginger and garlic paste. Saute for a few minutes and then add the bell pepper, spring onions and onion. Fry for around 5 minutes until the onion and bell pepper are soft
  • Add the cooked rice, tomatoes, cooked sweet corn , garam masala and salt. Mix well and simmer for around 5 minutes
  • Garnish with coriander leaves and serve hot

Enjoy this delicious corn pulav with a raita of your choice. This goes really well with cucumber raita
