Whole Wheat Chocolate Waffles


Enjoy these delicious whole wheat chocolate waffles for breakfast or serve them for dessert topped with your favorite ice cream ! My recipe is inspired from Alton Brown’s recipe for chocolate waffles: http://www.foodnetwork.com/recipes/alton-brown/chocolate-waffle-recipe.html . I used whole wheat flour instead of the all purpose flour and substituted nectarine puree for the eggs, you can use any fruit puree of your choice.

Ingredients

  • 1 1/2 cups whole wheat flour
  • 3 tbsp sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • One nectarine puréed
  • 2 oz unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 500 g Greek yogurt diluted with some water
  • 3/4 cup chocolate chips
  • Vegetable spray for waffle iron

Method

  • To make the nectarine puree
    • Wash and peel the nectarine 
    • Chop the nectarine into medium sized pieces 
    • Bring water to a boil and add the nectarine pieces 
    • Boil it for 5 minutes 
    • Strain the water, cool the nectarine and make a puree in a blender 
  • Whisk together the dry ingredients : flour, sugar, cocoa powder, baking powder, baking soda and salt until well combined and keep aside
  • In another bowl, mix the nectarine puree, butter and vanilla essence until the all the ingredients blends well. Add the Greek yogurt ( diluted with water ) and mix well
  • Add  the wet ingredients to the dry ingredients and mix gently with a spatula
  • Stir in the chocolate chips until well combined
  • Leave the batter aside for 5 minutes
  • Preheat the waffle iron and grease with vegetable oil or use a vegetable oil spray. This will ensure that your waffles come out clean
  • Follow the instructions to make the waffle. I use a cuisinart waffle maker and the steps below list instructions for the same:
    • Preheat the waffle maker and wait until the green light turns on
    • Pour 2 ladles of the batter in the center, gently spread with a spatula leaving an inch towards the edges
    • Choose the desired browning setting and wait for the green light to turn on again
  • Your waffles are now ready

Serve hot with maple syrup and butter  or enjoy it for dessert with vanilla ice cream 😊
