Macaroni in Kale and Tomato Sauce

Looking for a unique pasta recipe that includes veggies and is tasty as well ! Try out this yummy pasta richly flavored with tomatoes, kale, carrots and an assortment of ingredients like onion, garlic, basil, and oregano.

This is my aunt Banu Chithi’s recipe. My lil one also enjoyed this pasta. I have used macaroni for this recipe, but you can also use penne. The original recipe from my aunt used penne pasta.


  • 1 lb or 16 oz packet of macroni ( I used Elbows brand enriched macroni )
  • 18 oz can of tomato paste (Original natural paste, no flavor )
  • 1 1/2 cup water or vegetable stock
  • A bunch of kale finely chopped
  • 2 carrots
  • Fresh basil –  7 or 8 basil leaves, finely chopped  ( Note: If using crushed basil use ¼ tsp )
  • Oregano- ¼ tsp
  • Pepper, powdered  – 1 tsp
  • Garlic- 2 to 3 cloves
  • 1 big red onion, finely chopped
  • Nutmeg powder- ¼ tsp
  • Salt, to taste
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cream


  • Cook the macroni according to the directions on your package. These are the steps I followed:
    • Bring 5 qt or 20 cups of water to a boil. Add the macroni and salt and cook for 5-7 minutes. Strain the macroni and wash it under cold water. Keep some of the water used for cooking the pasta aside. We will be using it for the stock
  • In a pan, heat ½ tsp olive oil. Add kale to it with a dash of nutmeg. Sauté for 5-7 minutes. Keep it aside
  • Cut carrots and add water just to cover it and microwave for 5 mins in low power. Now grind the carrot in a mixie. Reserve the water used for cooking the carrots. We will be using it as part of our stock.
  • In another pan, add 1 tbsp olive oil, add onion and garlic and sauté it till it becomes glassy
  • Add the carrot puree
  • Add the tomato paste then add the vegetable stock. Use the water reserved from the steps above while cooking the pasta and carrot. We need 1.5 cups of vegetable stock. You can add extra water if needed
  • Add the basil, oregano, and pepper
  • Add salt and mix well
  • Add the kale and let it blend well for sometime so that it looks like a sauce
  • Add the cooked pasta and then add ¼ cup of grated parmesan cheese
  • Add ½ a cup of cream towards the end, mix well and remove the pasta from the flame

Serve hot garnished with some extra cheese if you love cheese 😊
