Rice Omlette

This rice omlette looks like a typical Appam and tastes like a Akki roti. This is a recipe that was invented by my mom, inspired by Appam and Akki roti. This is a Dosa that can be prepared very easily and does not require fermentation. This is another new recipe that you can try out in your Vellayappam pan. My lil one loved this Dosa 😊, so it will be a good hit with kids too

Makes : 10-12 appams

  • Rice flour-2 cups
  • Onion (big)- 1, finely chopped
  • Green chillies- 1-2, finely chopped
  • 1/2  cup thin coconut milk
  • 1/2 cup lukewarm water
  • Salt- to taste
  • Thick curd – 1/8 cup
  • Water as required for mixing
  • Ghee or oil for making the omlette/dosa

  • Chop onion and chillies into fine pieces
  • Mix the flour, coconut milk, water, salt and curd and beat thoroughly with a fork or using a blender. Add more water as required and make sure that there are no lumps in the batter
  • The batter consistency must be like a typical Dosa batter, but slightly thinner

  • To this batter , add onion, chillies and mix
  •  Keep this for a while around 1-2 hours to form porous ( like rava dosa) omelettes
  • Heat an appam pan or appam chetti , smear ghee or oil and pour a ladleful of the batter. Swirl it to form a thin layer of omelette and close with the lid

  • It can be turned over, or rolled like an omelette, or removed after cooking one side as for appam.

Serve hot and enjoy with stew or chutney 😊
