Vegetable Waffle



Savory Vegetable Waffles, inspired by Tarla Dalal’s recipe for Green Pea Waffle:  This recipe uses healthy ingredients like broken wheat and the end result is a delicious waffle 🙂 You can serve this chutney or even with the idly spice powder – molaga podi 🙂

Note: This is a very good breakfast idea for your toddler too, but cut down the green chillies and just add a pinch of red chilly powder instead. Also you can omit the fruit salt. Waffles taste yummy without the fruit salt too. Fruit salt gives it a fluffy texture


  • 2 cups mixed vegetables (Corn, beans, carrot, green peas)
  • 1 cup broken wheat rava (Dalia)
  • 10 tbsp urad flour
  • 2 tbsp curd ( I used greek yogurt)
  • 2-3 finely chopped green chillies
  • 2 tsp crushed cumin seeds
  • 2 tbsp finely chopped coriander leaves
  • 1/2 tsp asafoetida
  • 1 tsp fruit salt (I used Eno)
  • 4 tsp oil
  • Water, as needed to make the batter dilute
  • Salt to taste


  1. Cook the mixed vegetables well and keep aside
  2. Grind the cooked mixed vegetables in a blender to a coarse paste.
  3. Combine the vegetable paste, broken wheat, urad dal flour, curds, green chillies, cumin seeds, coriander, asafoetida, salt, oil and around 1 cup of water and make a smooth batter. I used my stand mixer to make the batter
  4. Just before making the waffles, add the fruit salt and mix gently
  5. Heat your waffle maker and follow the instructions to make the waffle. I use a cuisinart waffle maker and these are the steps I follow:
    • Preheat the waffle maker and wait until the green light turns on
    • Pour 2 ladles of the batter in the center and close the lid of the waffle maker ( The batter spreads itself pretty well, I don’t need to spread it before hand with a spatula )
    • Choose the desired browning setting and wait for the green light to turn on again
  6. Your waffles are now ready

Enjoy with chutney or idly molaga podi 🙂
