Vegetable Casserole

This is a yummy dish that kids will really enjoy to eat. It’s very easy to prepare as well. I have picked it up from my mom’s collection of “Party treats for children” by Jyoti N Parekh. Well, I know this is a recipe meant for kids, but aren’t we all still kids at heart 🙂 My next recipe in this series is “Moong Dal Squares”

Ingredients

  • Mixed vegetables (French beans, carrot, corn) – 1 cup

  • Potatoes, boiled and chopped – 2

  • Water or vegetable stock – 1 cup
  • Butter or pure ghee – 3 tbsp

  • Tomato puree – 1 cup

  • Tomato ketchup – 2 tbsp

  • Salt, pepper to taste
  • Sugar – a pinch
  • Wheat flour – 3 tbsp

  • For the topping
    • Bread crumbs – 4 tbsp

    • Grated cheese – 4 tbsp

Method

  • Melt two tbsp of butter and saute the vegetables for five minutes

  • Add the vegetable stock and cook until the vegetables are almost cooked

  • Add the tomato puree, ketchup and seasoning. Simmer for at least 5-7 minutes

  • Melt the remaining butter and stir in the wheat flour

  • Roast until the flour is golden

  • Add it to the vegetables and mix well

  • Grease a baking pan and spread the vegetable mixture. Sprinkle the bread crumbs and cheese on top

  • Bake at 300 degrees Fahrenheit for at least 20 minutes or until the cheese melts
