Akki Roti

This is a Karnataka dish and very easy to make and tasty too. This is my mother-in-law’s recipe and everyone at home enjoyed it

Rice flour : 3 cups (I used Nirapara Idiyappam Podi)

Carrot : 1 finely grated

Onion : 1 finely chopped

Cilantro : 1/2 cup

Curry leaves : 1/8 cup

Dessicated Coconut: 1/2 cup

Jeera: 2 tsp

Green chillies, 2-3 finely chopped

Salt to taste

Oil – For making the roti and making the dough

1. Roast the rice flour until slightly pink

2. Mix all the ingredients with rice flour, adding water as needed to make a pliable dough

3. Grease a plastic sheet with oil or use wax paper

4. Take a small portion of the dough and spread it on the plastic sheet using greased hands to make a round roti. To get a crisp roti, it should be spread evenly and should be thin

5. Heat a tava and carefully remove the roti from the plastic sheet and place it on the tava

6. Pour a spoon of oil over it and cover and cook for few minutes. Remove the cover and cook for another minute. Cook it until one side is roasted and golden brown. You only need to cook one side of the roti. Since the roti is thin both sides will get cooked evenly.

7. Serve hot with coconut chutney and enjoy
