Eggless Fruit Biscuit

A delicious, quick and easy to make fruit biscuit. It is one of my mom’s recipes 🙂

Ingredients

  • Butter – 113 g or 1/2 cup
  • Powdered sugar – 100 g
  • Mixed spice – 1/2 tsp (Cinnamon, cardamom and cloves, finely powdered)
  • A pinch of salt
  • Raisins – 100 g
  • Flour – 200 g
  • Candied peel (Lemon or orange)  – from 1/4 lemon or orange
  • Milk – 50 ml
  • Baking powder – 1/2 tsp

Method

  • Basic Preparation
    • Place the butter outside for 5-10 minutes so that it reaches a room temperature. The butter should not melt, we just want it to reach a room temperature so that it blends well with the batter
    • Line the cookie tray with greased parchment paper
    • Sieve the flour, salt and baking powder and keep aside
  • To make candied peel
      • Take peel of 1/4 lemon (peel it with a peeler so that the white part is not included). Finely chop the peel into thin strips. Now heat 1/4 cup water and add 1/8 a cup of sugar. Heat it for 5 minutes, till the sugar dissolves. Now add the peel and keep it on low flame till the quantity is quarter (keep it for at least 10-15 minutes)
      • Coat the candied peel mixture with 1 tbsp of flour so that it blends well with the flour mixture
      • Make the candied peel while you start making the cookie batter so that you can add it immediately. If left for a long time, the candied peel will solidify and harden
  • To make the batter
    • Cream butter and sugar until frothy
    • Add the milk and mix well
    • Mix in spoonfuls of flour. At this stage, use a folding in movement, i.e. mix well in one direction so that there are no air bubbles formed
    • Add the candied peel, and raisins and mix well to make a smooth dough
  • Baking
    • Preheat the oven to 350 degrees Fahrenheit for 10 minutes
    • Shape the dough into 1 inch balls and place 2 inches apart. Flatten them slightly using your palm
    • Give enough space for the cookie to expand
    • Bake for 20 minutes or until one side turns golden brown (Time may vary depending on your oven settings)
  • Cool on a cooling rack for a sufficient amount of time

Enjoy the cookies as a dessert after a meal or with a sip of your favorite chai 🙂
