Granny Smith Apple (Green Apple) Thokku or Pickle


I first tasted this pickle at my aunt Banu Chithi’s place. This is a pickle that goes really well with dosas and curd rice.  It has the same taste as raw mango pickle.  This is my first attempt at making a pickle. My mother in law taught me this recipe, and it came out good 🙂


  • Green Apple or Granny smith apple – 2
  • Red chilli powder – 5 tsp
  • Fenugreek seeds – 1/4 tsp
  • Salt – 3 tsp
  • Gingelly oil – 1/4 cup
  • Mustard seeds – 1/2 tbsp
  • Turmeric powder – 1/4 tsp
  • Asafoetida – 1/4 tsp

Note: Please adjust the spice and salt according to your taste and according to the sweetness in the green apple as well. We prefer medium spice in food, so I only added  5 tsp of red chilli powder


Basic Preparation:

  • Chop the apple into small pieces


  • In a microwavable bowl, add a little water, the apples and microwave for a few minutes, till the apples turn soft. Blend to a fine paste, without adding water


  • Dry roast fenugreek seeds until fragrant and dry grind to a fine powder

Making the pickle:

  • Heat 1/8 cup of gingelly oil in a pan and add the mustard seeds. When they splutter, then add the turmeric powder, red chilli powder and asafoetida
  • Add the apple mixture, salt, the remaining oil and keep stirring till you reach the consistency of a halwa You will know you have reached the right consistency when the apple mixture comes together as one mass and the oil starts to ooze out
  • Add the powdered fenugreek, and keep it aside to cool down
  • Once cooled, store in a dry airtight container and refrigerate

You can enjoy this pickle with dosas and rice  🙂
