A quick and easy samosa recipe, that can be enjoyed as an evening snack with tea.
- For the batter
- 1/2 cup all purpose flour or maida
- 1/2 cup corn flour
- 1/8 cup wheat flour
- 2 tsp oil
- 1/2 tsp salt
- Water, as needed to make the dough
- For the filling
- 1 cup corn kernels, chopped red peppers, chopped green peppers and chopped onion (Note: The entire mixture combined should be 1 cup)
- 2 tbsp coriander leaves, chopped
- 2 tbsp coconut, grated
- 1 tbsp green chily – ginger paste
- Salt and sugar to taste
- 2 tbsp lemon juice
For the batter
Mix all the ingredients and knead well to make a soft dough. Cover the dough with a moist cloth and keep aside for 10 minutes.
For the filling
Crush the corn, onion, red and green pepper mixture either in a food processor or by hand. Make sure that you do not blend it fine. The mixture should be coarse.
Combine this mixture with the coconut, green chilly – ginger paste, salt, sugar and lemon juice.
Shaping the samosa
Divide the filling into 20 equal portions.
Divide the batter into 10 balls. Roll each ball into a small round. Cut it into two semi circles. Fold each semi circle into a cone.
Place the filling into the cone and stick the edges to make mini samosa
Finally, frying the samosas
Heat oil in a pan and deep fry the corn mini samosas. Turn each side while frying till each side turns crisp and has a golden color.
Serve hot with tomato ketchup or green chutney and enjoy :).
