Bhatura: V 1.0

This is a recipe passed down to me by my mom. She makes awesome bhature. I have experimented with the curd used for bhatura. I substituted curd with sour cream and the bhatura came out really good.

Ingredients:

  • Maida – 4 cups
  • Baking powder – 1 tsp
  • Sugar – 1 tbsp
  • Sour cream – 1/4 cup
  • Milk – 1/2 cup

Method:

Mix maida and baking powder and sieve once. Add sugar, and mix again. Add 1/2 cup milk, 1/4 cup sour cream and water (only as required, let the dough be firm). Knead into a soft dough in the shape of a big ball. I used the Cuisinart food processor to make the dough and it came out really good. Cover the dough with a wet cloth and keep for four hours.

The dough will rise well after four hours. After that, make small balls and roll on a chappathi slab.

Choose a frying pan according to the size of the batura that you roll. Make sure that you add enough oil so that the batura puffs up. Fry the batura on both sides till they puff up well. Right temperature and quantity of oil is a key element to make puffed up baturas.
